 CHOCOLATE FUDGE ICING


6 tablespoons cocoa
2/3 cups milk
2 cups sugar
1 stick butter
½ teaspoon salt

Put ingredients in medium sauce pan. Bring to boil over medium heat and boil for three minutes.

Remove from heat and beat by hand until thick and glossiness is gone.

 OATMEAL CAKE SAUCE


6 tbs butter-melted
½ cup brown sugar
½ cup coconut
½ cup nuts chopped
¼ cup cream
½ tsp vanilla

Mix all ingredients together and spread topping on cake while still hot from oven.

Broil 4” from burner until just melted and bubbly. Watching it all the time.

**Topping recipe can be doubled**

 TEXAS SHEET CAKE FROSTING





½ cup butter
¼ cup milk
1 cup powdered sugar
½ tsp almond extract
8 oz cream cheese
1 cup walnuts chopped
Combine butter and milk in saucepan. Bring to a boil. Mix cream cheese and sugar and extract, add butter and milk, mix well.
Spread on warm cake, add nuts to icing on cake.

 BROWN SUGAR SAUCE


1 stick butter
½ cup can milk
1 cup brown sugar


Mix ingredients for sauce in pan, bring to a boil

 Pour over cake while still hot.

 PINEAPPLE CREAM CHEESE FROSTING


8 oz cream cheese
1 stick butter
1 ¼ cup powdered sugar
3 tbs pineapple, crushed, chopped and well drained
¼ cup walnuts chopped
1/8 tsp cardamom


Mix cream cheese, butter and powdered sugar until fluffy, add the other ingredients and mix well.

 SYRUP SAUCE


1 cup sugar
½ cup water
½ stick butter
½ cup rum or amaretto


Boil water, sugar and butter for 5 minutes.

Add liqure. After 1 minute remove from heat.

Let syrup cool 5 minutes. Make small holes in top of cake, pour and spread evenly.

 POWDERED SUGAR ICING



1 tbs. milk, 1 tsp. vanilla
½ cup powdered sugar


Whisk ingredients together well.

 COFFEE ICING


½ tsp instant coffee
1 tbs hot water
1 cup powdered sugar
30 grams butter soft


Dissolve coffee in water.

Sift sugar into bowl, add butter and coffee mixture, beat until smooth.

 BUTTERY SAUCE


¾ cups sugar
½ cups butter
1 egg, slightly beaten
¼ cup amaretto

In small pan put sugar and butter.

Cook over medium heat stirring constantly till sugar melts - about 5 minutes.

Remove from heat, stir some of the mixture into egg.

Return mixture to pan, cook and stir 2 minutes more.

Cool.

Stir in amaretto, serve sauce over bread pudding.

 CARAMEL-FROSTING


½ CUP BUTTER
1 CUP BROWN SUGAR
¼ CUP POWDERED SUGAR


**Melt butter in pan**

Stir in brown sugar, heat to boiling, stirring constantly.


Boil and stir over low heat for 2 minutes .

Stir in milk, heat to boiling, remove from heat.

Cool to lukewarm, gradually stir in powdered sugar.


Place pan in bowl of cold water, beat til smooth and spreading consistency.

 NUTMEG SAUCE


1 cup brown sugar packed
2 tbs all purpose flour
¼ tsp nutmeg
1 cup boiling water
3 tsp butter


Combine brown sugar, flour and nutmeg, gradually add water.

Cook, stir till thickened. blend in butter

 PEGGY'S SPEEDY SPAGHETTI SAUCE


2 tbs shortening
1 ½ lbs ground beef
½ tsp garlic powder
½ tsp oregano
3 tsp sugar
½ tsp salt
¼ tsp black pepper
1 env dry onion soup
8 oz tomato sauce
6 oz tomato paste
1 ½ cups water

Brown meat, add other ingredients and simmer for 30 minutes.

 TRY THIS SWEET AND SOUR BAR-B-QUE SAUCE


PEGGY'S BAR-B-QUE SAUCE


1 ¼ cups water
2 dashes worcestershire sauce
1 1/3 cups brown sugar
1 teaspoon salt
3/8 teaspoons paprika
1 ½ teaspoons pepper
1 ½ teaspoons chili powder
2 dashes red pepper
¾ cup vinegar
3 tablespoons flour
3 tablespoons oil

Place all ingredients into blender and mix well.

 Pour into medium sauce pan and bring to boil over medium heat.

Turn heat down to low and simmer for 5 minutes stirring constantly.

Cool and pour into container.

 BEER BARBECUE SAUCE


¼ cup oil
1 onion-chopped
1 garlic clove-chopped
1/3 cup lemon juice
2 cups beer
2 cups chilli sauce
3 tsp worcestershire sauce


Heat oil and saute onion and garlic until soft.

Add lemon juice, beer, chilli sauce, worcestershire and salt.

Cook over medum heat until sauce bubbles, about 5 minutes.
