 MEAT DISHES










 One of my favorite recipes for venison.



VENISON SWISS STEAK


3 lb. venison-steak or roast, cut in ¾ “ slices.
½ cup flour, for dredging
½ tsp salt, add to flour
½ tsp pepper, add to flour
½ cup bacon grease
2 cups stewed tomatoes
1 lrg. onion chopped
1 can sliced carrots or (4 carrots chopped fine)
12 oz beer
3 tsp Worcestershire or soy sauce
½ tsp margarin or thyme
2 cups liquid beef or chicken broth
3 tsp brown sugar
salt and pepper to taste

Dredge meat pieces in flour and brown meat in bacon grease.

Add meat to baking dish cover with other ingredients, add enough liquid broth to make sure meat is covered.

BAKE covered at 300* for 2 ½ to 3 hrs or till meat is done.

Take cover off and bake till sauce is good and thick.

 Hamburger can make endless recipes and this is one of my favorites.



COTTAGE MEATLOAF


1 ½ lb. ground beef
½ cup ketchup
1/3 cup tomato juice
½ tsp salt & pepper
dash red pepper
2 eggs beaten
¾ cup cracker crumbs
¼ cup onion chopped
2 tsp mustard
TOPPING:
¼ cup ketchup
½ tsp mustard
2 tsp brown sugar


Combine ketchup, tomato juice, salt, black and red pepper, eggs, cracker crumbs , onion and mustard. Mix till blended. Add beef. Mix well.

 Press in baking dish.

Combine topping ingredients, mix well, spread over meat loaf.

Bake at 400* for 35- 45 minutes.

 Taco lovers try this Open-Face recipe.



PEGGY'S TACOS


For about four tacos:

2 lb. hamburger
1 sm. head lettuce
1 lg. can tomato sauce
2 tbs. white corn meal
3 tbs. oregano
2 ½ tbs. red pepper
2 ½ tbs. garlic salt or powder

Brown hamburger with 1 ½ tbs oregano, 1 ¼ tbs., red pepper, and 1 tbs. garlic. After hamburger browns drain grease, add water and 2 tbs. white corn meal. Cover and let simmer .

In small pan, combine tomato sauce, 1 ½ tbs. oregano, 1 tbs. tbs. red pepper and 1 tbs garlic salt. Heat to a boil then turn on low.

In skillet deep fry tortilla shells. Remove from skillet and cover with hamburger, next top with lettuce, then with cheddar cheese, cover with tomato sauce and serve hot.

 For a tasty Chicken with sauce try this.


SAUCY CHICKEN


5-6 legs or thighs or combination of both
¾ cups flour
2 teaspoons salt
2 teaspoons garlic powder
½ teaspoon pepper
¼ cup oil
8 ounce can tomato sauce
1 tablespoon sugar
1 teaspoon vinegar
1 small onion, diced

Combine flour, salt, garlic powder, pepper. Shake chicken in flour and spices to coat. Brown in ¼ cup oil.

Mix tomato sauce, sugar, vinegar, onion and pour over browned chicken. Simmer chicken for one hour - basting or turning occasionally.
